So, yesterday was quite the day!  Both Bart Yasso & Matt Long shared my post about them with their Facebook & Twitter followers.  My traffic from the first 2 weeks of blogging was doubled yesterday alone, from their support.  Thanks so much to both my heroes for proving that they deserve to be on my inspiration list by taking the time to share my blog!!

My Running Heroes

We all need a little motivation every now & then…so I decided to share some of my running heroes with you.

First up, is Bart Yasso, who wrote “My Life on the Run”, which is an excellent book for runners of all levels.  He chronicles different runs and races he’s done all over the world, describing different adventures he’s found himself in; running from a rhino, doing a nudist race, etc.

Homemade Fruit’n’Nut Bars – Coconut Cherry

So another recipe I stole and modified from a recent Paleo Potluck was for homemade Coconut Cherry Lara Bars (Fruit & Nut bars).  When I first saw these, I wasn’t excited to try them at all, since I’ve never liked Lara Bars, I’ve always found them a bit dry and that they leave an aftertaste.  However, after trying these at the potluck, I was hooked, and had to make my own!

Proscuitto Wrapped Frittata Muffins

Looking for something quick and easy to grab to eat in the morning?  I went to a Paleo potluck on Friday evening, and fell in love with these frittata muffins!  I changed the recipe slightly, and they came out great!  They are 100% Paleo, and are really easy to make, delicious to eat, and fully portable for those on the go mornings!  YUM!
